2010 In Photos

Looking back over this year, I cannot believe how much my little boy has grown and changed in appearance!

This year has been one of so many of his 'firsts' from weaning to eating, sitting up unaided to walking, turning one in July, being out in the snow, first walk along a beach, first boat trip, first zoo visit, swimming and so on.

Seeing him get cheekier and establishing himself as an individual has been very funny to observe. Watching his relationship blossom with me, his Daddy, Penguin and other family members and friends has been a delight to see. His love of books and In The Night Garden and the pleasure that the little things bring him. Not forgetting his infectious smile and laughter, aswell as the signs of his frustrations brought out in his little tantrums which can be hard to watch with a straight face sometimes!

It has been such a happy year watching him progress and learn more as each day passes. I look forward to many, many more exciting years of his development :)

Of course next year we welcome another little one into our little family which is both exciting and scary at the same time! Wondering how I will cope with Burton and another, and worrying how its big brother will take to its arrival! It will be interesting to see my year in photos this time next year :)

Christmas Day Fun

So Christmas is over *sighs*. All that excitement and preparation building up to it and then it is all over so quickly. This year was Burton's second Christmas so although he still doesn't really understand what it is all about, he was a bit more aware than last year! As you can imagine he had so many presents which I enjoyed opening possibly more than he did (I am such a big kid when it comes to Christmas and present opening!). We spent the day at my Mum and Step Dad's with my grandparents and my brother and his girlfriend. I was awake before Burton laying in bed wishing him to open his eyes so I could get downstairs and get cracking with his Father Christmas presents lol

Anyway, we eventually got around to opening the presents from Santa at 8.45am and here are some photos of Burton checking out his loot.

Once the Santa presents were opened we carried on opening one of his other gifts every half an hour or so to ge through them! Some of the presents he got included:

His main present from Mummy and Daddy was a baby grand piano because he loves noisy musical things. This was taken Boxing Day






He was a very lucky boy as he received so many lovely new toys and books and puzzles. It is nice having some new things to play with too, i must admit.

Merry Christmas Card

Well the big day is almost upon us! Whoop whoop!

I just wanted to wish all my blog and twitter friends a very Merry Christmas and a happy and healthy 2011. Also to thank you all for being so welcoming and friendly during my first Twitter and blogging year. I have twitter-met some wonderful people who have kept me company while being a SAHM.

So as I cannot send you all cards individually, here is a virtual one from me to you all. It is one which we made ourselves and sent out to our family and very close friends. Poor Burton was poorly while we were trying to photograph him and it took ages to get him to sit still and smile! You may notice an iPad near him which was showing In The Night Garden as a way of getting him to sit in that position!

Christmas Pudding Recipe

If you haven't yet bought your Christmas pud or made one even, then let me share this recipe with you as there is still time, as I only made mine today!

I first made this version of a Christmas pudding last year and it went down so well with all my guests! So much so that I have been asked to make it again this year! I have to thank the BBC Good Food Magazine for this amazing recipe as it was in my December issue last year, but you can also find it on their website.

One thing I like about this version of a Christmas pudding is that you don't have to steam it as you bake it in the oven, and because it is baked in a loaf tin it cuts so much more easily for your guests than a pudding bowl version!

I made a couple of adjustments to the recipe this year, having stuck to the original last year, but the recipe is as follows:

INGREDIENTS

400g dried mixed fruits
85g glacé cherries * I added dried cranberries and some sour cherries instead*
1 Bramley apple , about 175g, grated, plus zest 1 orange and 1 lemon
150ml good apple juice
2 tbsp brandy
2 tbsp Cointreau (or use more brandy)
140g butter , plus extra for greasing
100g dark muscovado sugar
2 large eggs , beaten
85g self-raising flour
100g white breadcrumbs
2 tbsp golden syrup
2 tsp mixed spice
1 tsp ground cinnamon
½ tsp salt
25g toasted hazelnuts , pecan nuts and blanched almonds, roughly chopped

FOR THE TOPPING

50g butter
50g dark muscovado sugar
1 tbsp golden syrup
1 tbsp brandy
25g each toasted hazelnuts, pecan nuts, blanched almonds and glacé cherries , left whole

METHOD

Put the dried fruit, cherries, apple, zests, apple juice, brandy (and Cointreau) in a large bowl. Microwave on High for 1 min, then leave to soak overnight.

Butter and line a 2lb loaf tin with a strip of non-stick baking paper. Heat oven to 180C/160C fan/gas 4. Put the kettle on to boil and have a roasting tin, plus a sheet of buttered foil, ready.

Beat the butter and sugar together until it turns a little paler, then stir in the eggs, flour, breadcrumbs, syrup, spices, salt, soaked fruit and the nuts.

Everything mixed together including the nuts (which I almost forgot to add earlier! Blame my baby brain!)







Spoon into the loaf tin and smooth the top.







Scrunch the foil loosely over the tin, twisting corners to tighten it around the tin's edges. Sit it in the roasting tin, then pour in a few cms of boiling water. Carefully transfer to the oven and bake for 40 mins.

After 40 mins, turn down the oven to 160C/140C fan/gas 3 and cook for another 1½ hrs, topping up the water level every now and again.

Here is the cooked pudding, wrapped up ready to going into the fridge until the 25th






Once the pudding has completely cooled down, wrap it in foil and place in the fridge until you need it. I left it in there a week last year, as I am doing again this year, but you can make it up to 4 weeks in advance to allow it to mature.

TO SERVE:

To reheat the pudding, either return it to a medium oven for 30 mins in its tin, or turn out onto a serving plate, cover loosely with cling film and microwave for 5 mins on Medium.

TO MAKE THE TOPPING

Gently heat the butter, sugar and syrup together until the sugar dissolves, stir in the brandy, then tip in the nuts and fruit. Spoon over the hot pudding.

FINISHED RESULT

Obviously I don't have photo of the finished pudding with it's gorgeous topping as no one took a photo of the one I made last year, and it's not Christmas Day yet so I don't have a photo of this one yet either! So I will have to use the Good Food picture instead! But it does look like a shop bought pud once it's presented on the table! Trust me I know as my guests last year asked me if I had really made it! How rrruuude!

Christmas Tree and Other Christmassy Fun

So anyone who follows me on Twitter will know that after more than a week of pestering my OH, we finally got our Christmas Tree last Saturday. It was a bargain aswell at only £10 for a real 7ft tree. With a little help from my friends, well the OH and Burton, the latter of which got excited at the red bead garland and baubles and thought they were new play things and got most upset when we took them off him to put on the tree, the tree was decorated on Sunday morning.

I went for red and white as the theme this year for Burton really, as the last two years I had more grown up colours that co- ordinated with our interior colour scheme! I added a few decorations that thought he will enjoy seeing every year from Father Christmas's to Christmas stockings to baby penguins. As our star is gold I also added some sparkly gold baubles too.




So far Burton has been very good with the tree, as I had visions of him trying to remove the decorations and shaking the branches, but, fingers crossed, he has only really pointed at them so far! Oh and looking at his reflection in the shiny ones!

Aswell as the advent reindeers which I bought, also a set of Christmassy Russian dolls as I thought they would be of interest to Burton. He loves them! He likes to line them up and then knock them down with either his ball or Penguin! He also enjoys them being lined up and pointing to them while I count them!




He also received his first Christmas card of the season from my Dad this week, which featured a glittery penguin on the front. Well he loved it as you can see :)

The Gallery - Golden Ball-bles!!


So it is Gallery time again and this week Tara over at Sticky Fingers has given us the theme of SPARKLE.

So seeing as though it is the festive period it would be rude not to show a photo of my shiny disco baubles!! So I tried to take some *ahem* "arty farty" shots to see how different a bauble can look and here are the results.
